Since I’ve taken a challenge to try and do my best to eat healthier, I’ve decided to sign up for the Toneitup Bikini Series and so far, this has held me accountable for almost 5 days. This usually never happens because I don’t like to cook (doesn’t mean I can’t cook, I just don’t like to lol!) and meal-prep for success. Now, If you are like me, I had no idea how to start and accomplish a meal-prep session. I don’t have a trainer, I do have friends in the fitness industry however, They aren’t in the same state as me. I don’t go to a gym due to my scheduling conflicts and again, I hate to cook. Luckily, I’ve decided to work really hard for the next 8 weeks to eat as clean as possible (I’ll probably have cheat days) but I vowed to workout and start back up my running sessions in the mornings. I’ve also mastered the art of meal prepping! (Let me know if you want to see a video on my youtube channel!)
For Day 4 I made a quick and healthy Lettuce Wrap with Tuna and I loved it! I actually have more in the fridge that I might eat for a night snack. But I’m still full from my other meals. Let’s jump into this recipe!
WHAT YOU NEED:
- Red Onion
- Grape Tomatoes
- Sweet Peppers
- Watercress (Optional)
- Olive oil mayo
- Tuna (Optional)
- Sea Salt
- Romain Lettuce
HOW TO MAKE HEALTHY LETTUCE WRAP WITH TUNA
Chop up the cucumber, Pepper, tomatoes, watercress, onion & pepper. Place it in a bowl and season with sea salt and pepper to taste.
Add the olive oil mayo to the veggies until you get a thick consistency and mix all the chopped veggies together. Add more salt and pepper to taste and wash your Lettuce.
Open an avocado and spoon the mixture onto the lettuce. (If you decide to use Tuna, mix this with the chopped veggies)
For an extra kick, I added Sirachia which is a chili pepper sauce and it was DELICIOUS! I had two and I still feel full and happy! Checkout my other recipes here
