Last week I did a meal prep and I made one of my favorite salads that involves fruit! I wanted to share my mixed leaf salad recipe since I had some requests on snapchat!
Mixed Leaf Salad Ingredients:
- Mixed Leaf Salad (I like to include spinach)
- Olive Oil
- Lemon Juice (I like to use fresh lemon juice)
What to do next:
Wash the salad with a vegetable and fruit wash and start to dice the fruit.
I like to use Peaches, Strawberries and blueberries. I didn’t have blueberries, so I used the first two.
After cutting up the fruit into bite sized pieces, place the salad and fruit in a bowl and mix it together. In a separate bowl, mix half a lemon, olive oil, salt and pepper and whisk with a fork. Chill in the fridge prior to consumption to get a refreshing dressing.
Once ready to eat, drizzle the dressing over the salad and mix with utensils or wash and mix with your hands. The key is to have a light mix of dressing on every leaf or piece of fruit. If you want to add a little crunch, toast bread and mix garlic, a little butter with parsley. Melt and drizzle it onto the croutons and drop over salad when ready to eat!
